I made pemmican back when I was a Boy Scout. I found it ‘greasy’, which of course it was. I could eat it, but didn’t especially like it. The dried berries are more than just flavor, they provide the vitamin C that is absent from the basic pemmican. The Polar Explorers relied upon pemmican as the suet/tallow provided them with the energy that they needed in the cold environment. They also included dried peas as the peas helped them with bowl movements, something you don’t think of until you have your pants down in the arctic regions.
Unless you are in a rather cold environment, do not try to make pemmican with lard. Lard melts at too low a temperature and becomes a mess. You need the hard stuff that is found in say beef suet or better yet, bone tallow.

I made pemmican back when I was a Boy Scout. I found it ‘greasy’, which of course it was. I could eat it, but didn’t especially like it. However, a mate of mine, while we were out biking and I had some pemmican in my bike bag, LOVED the stuff. He couldn’t get enough of it – so I let him eat all the rest of my pemmican.
The dried berries are more than just flavor, they provide the vitamin C that is absent from the basic pemmican. The Polar Explorers relied upon pemmican as the suet/tallow provided them with the energy that they needed in the cold environment. They also included dried peas as the peas helped them with bowl movements, something you don’t think of until you have your pants down in the arctic regions.
Unless you are in a rather cold environment, do not try to make pemmican with lard. Lard melts at too low a temperature and becomes a mess. You need the hard stuff that is found in say beef suet or better yet, bone tallow.
